Gluten Free Devils Food Cake

My gluten-eating family raves over this recipe, requesting that I bring it to family get-togethers and such. Super-moist and tender, this isn’t much more difficult than cake from a mix — just a bit more measuring — and it tastes a whole lot better!

Ingredients:

  • 2 1/4 c. gluten free flour mix
  • 1 2/3 c. sugar
  • 3/4 c. soft butter
  • 2/3 c. cocoa powder
  • 2 c. cool water
  • 1 1/4 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1/4 tsp baking powder
  • 2 eggs

Preheat oven to 350.

Prepare your pans by spraying them with nonstick spray, then dusting them with brown rice flour.

Beat all ingredients together in a big bowl, starting with the mixer on low, then turning it to high for about 1 minute. Scrape sides of bowl with a spatula while mixing.

Pour into pans of your choice and bake for the time shown:

  • 9 x 13″ rectangle: 40-45 minutes
  • 2 9″ rounds or 3 8″ rounds: 30-35 minutes
  • About 2 dozen cupcakes: 20-25 minutes

Cakes are done when a toothpick inserted into the center comes out clean. Cool for a few minutes in the pan, then turn out onto wire racks to cool completely.

Frost with your favorite frosting after cake is completely cooled (I sometimes put mine in the freezer before frosting it).
